VSU President’s Message 2nd Quarter 2013 Newsletter

Happy SPRING..  I love daylight savings time; springing forward – getting an earlier start on days light and as I do my daily walks I’m enjoying the new green life that is popping out all around us.  If you plant a garden, thoughts are on what you will plant and planning the delicious healthy, fresh, nutrient dense dishes you will prepare!  Yes, it’s spring time….

When I turned “vegan” 6 years ago, it was not the “buzz word” that it is today. Now the word Vegan is springing up everywhere from prime time television programs, to the internet, grocery stores, restaurants and many more local activities which are involving some aspect  of eating more whole food plant based!  It’s very exciting!

 

Spring brings “tabling” weather and VSU is right there with our table of information,with a preponderance of medical and scientific evidence  to support the whole food plant-based diet and lifestyle.  Whether you choose going “cold non-turkey vegan” like I did, or start introducing more  vegetables, whole grains, starches and fruits, into your diet or just start out  with “meatless” Mondays – Nutritious Way and VSU has the support and information to guide you along your journey to taking control of your health.  Be sure to visit our table at the Downtown St George Farmer’s Market in Ancestor Square starting Saturday, May 11, 8 am to noon.. It’s also a great way to support our local farmers, purchase fresh produce, enjoy live music, meet friends, and support our local crafts people.

Health Healing Happiness 2013, Springs Preserve, Las Vegas NV, June 15 & 16.

Vegetarian Summerfest  2013 is July 3-7 in Johnstown  PA.  This 5 day event on the Pitt-Johnstown campus is an incredible experience.  Over 65 speakers, hundreds of vendors, over 700 attendees from around the world – the 39 Annual Conference of the North American Vegetarian Society.  Plan now to attend.  This is an experience that you will never forget.  Check it out and register…  vegetariansummerfest.org  or call 518.568.7970.
